I don't think they even really used bumpmapping, and displacement mapping is just a buzzword for their terrain engine.

Do you have a screenshot?  I haven't seen this in the source engine.  The "displacement map" they showed in the E3 video was basically just a morphable terrain engine (polygons that moved).  Once we get pixel shader support in, we could do this with paintball2 (the stuff you were talking about -- "3D" textures on a flat surface) but I probably won't because it eats up framerate like mad.
