I wanted to have my paintball fullscreen, and that didn't worked. But my problem is:

I set video options to the lowest: 340x480 or something like that

And when I set it back: My texture is very small

How can I set that back?

maybe save your maps , screens and demos en reinstall paintball.

Well it's the size of the text and stuff which are now very small

Don't chnage it back! Its much better smaller. And do what Viciouz said.

Setup > Layout Options > Hud/Text Scalse.

Also it could be that you just set your resolution higher. The before pic looks like it is set at 800x600 and the after looks like it may be 1024x768 or something a little higher.

Also do you remember changing your "fov" at all. (I don't think this has anything to do with it.

setup> layout > move the scroll bar to the right
