Ok is there anyway I can chasecam myself from an observer point-of-view, while recording a demo?

No. At least, not that I know of.

Edit: Wait, search the forums for "Demo Recam". That might be what you're looking for.

Even a recam wouldn't do it, unless you wanted to follow yourself manually.

Open 2 instances of paintball and chase cam yourself with one of them. The only downfall to this is that you will get laggy.
